The wine
Fresh and attractive on the nose, with a lovely minerality in the mouth, Exton Park's signature Brut is a pure expression of the house style.
RB|32 is a blend of 60% Pinot Noir and 40% Chardonnay grapes, all grown on their Hampshire vineyard and made using the traditional method.
Pale gold in colour, the Brut has a generous nose and a bright lemony character with notes of passion fruit and honey. Minerality in the mouth indicates a good, balanced structure, with an intense backbone and a lengthy finish with a whisper of white pepper.
The Chocolate Truffles
Choose between classic Marc de Champagne, Pink Champagne or salted caramel.
Marc de Champagne
Our version of the classic truffle, made with generous amounts of Marc de Champagne in a smooth milk chocolate fresh cream ganache. Coated with Venezuelan single origin dark chocolate and dusted with icing sugar to give a lovely initial crack, a smooth centre and excellent balance of cocoa and alcohol flavours.
Pink Champagne
Gorgeously boozy and fruity, our pink champagne truffles are made with generous amounts of Marc de Champagne and Crème de Cassis (blackcurrant liqueur) in a smooth milk chocolate fresh cream ganache. Coated with Venezuelan single origin milk chocolate and dusted with icing sugar and raspberry powder to give a delicious balance of fruit and chocolate, with a pleasing alcohol kick.
Salted caramel
A tub of 8 handmade caramel truffles infused with vanilla and enhanced with just the right amount of Cornish sea salt. Each chocolate is encased in 65% origin dark chocolate from the Sur del Lago region of Venezuela and dusted with cocoa powder and gold shimmer.
Exton Park Vineyard
Exton Park vineyard is built, quite literally, from the ground up, on the distinctive chalky soil that sets our sixty acres of Hampshire apart. Our single vineyard has nine plots, carefully nurtured by Fred and his team, each planted at a different altitude and aspect, offering exceptional flavour variation in our grapes.
Behind the Scenes
Fine quality chocolate
The key ingredient! We use chocolate from some of the finest chocolate makers in the world: Felchlin of Switzerland and England's very own Pump Street Chocolate.
Handmade Centres
We make our ganaches, pralines, fruit jellies and caramels by hand using fresh cream, real fruit purées, nuts, herbs and spices. No preservatives or nasties here.
Moulded chocolates
For moulded chocolates, we decorate the mould, then create the chocolate shell. Once the chocolate has set the shell is filled by piping the centre, which is then left overnight to crystallise. It is finished the next day with a chocolate 'bottom' to seal the chocolate.
Traditional bon bons
Bonbons are made as a large slab, which is left for 24 hours to crystallise. The slab is then cut into pieces a 'guitar'. These are also left to settle before being enrobed (coated) with chocolate and decorated.
